Super Easy Slow Cooker Beef Tips with Gravy
Okay but—can we all agree that beef tips are underrated?
If you’ve never made Slow Cooker Beef Tips with Mushroom Gravy, buckle up because this recipe is what comfort food dreams are made of. We’re talking melt-in-your-mouth beef, savory mushrooms, and a glossy, rich gravy that begs to be poured over mashed potatoes (or egg noodles, or rice—whatever’s calling your name).
This dish is basically the slow cooker’s answer to “I want to eat like a queen, but I also want to watch four episodes of my comfort show and do nothing.” And honestly? We love that energy.
So… What Are Beef Tips, Anyway?
Let’s clear this up real quick because “beef tips” sounds a little vague. They’re usually chunks of chuck roast or stew meat that break down over time into fork-tender little bites of heaven. Originally popular in the Southern U.S., beef tips have always been a cozy, Sunday-dinner-style meal—and the addition of mushrooms and gravy makes them even more classic.
Fun fact: mushrooms are one of the only non-animal sources of umami (a.k.a. the savory flavor that makes food taste super satisfying). So basically, adding them to your beef tips is both traditional and genius.
Why You’ll Love This Recipe:
- It’s slow cooker-friendly (or Instant Pot, if you’re in a hurry).
- The flavor is chef’s kiss thanks to Worcestershire, garlic, thyme, and a lil’ unexpected pop from pepperoncini peppers.
- The mushrooms + gravy combo is luxurious but not fussy.
- It tastes like it took all day… but you barely did anything.
What to Serve with Beef Tips
You’ve got OPTIONS. This recipe loves:
- Creamy mashed potatoes (classic, buttery, perfect).
- Buttered egg noodles (retro and underrated).
- Steamed rice (for the gravy to soak right in—yes please).
- Green beans or roasted carrots (because balance).
- A tangy side salad (to cut the richness and make it feel like you “ate a vegetable”).
Pro Tips:
- Don’t skip the pepperoncini! They melt into the sauce and add a subtle tangy depth—not spicy, just extra flavorful.
- If you don’t have mushroom powder, you can leave it out—but if you do have it, it amps up the savory vibes in a major way.
- Yes, you can totally prep this the night before and just turn it on in the morning. The slow cooker is your bestie.

- 1 bay leaf
- 1 tbsp Worcestershire sauce
- 1½ tsp each garlic powder
- 1½ tsp sugar
- 1 tsp onion powder
- 1 tsp dried thyme
- 2 tbsp cornstarch mixed with 2–3 tbsp water

Instructions
Slow Cooker Instructions:
- In the slow cooker, whisk together the beef stock, Worcestershire, flour, garlic powder, onion powder, thyme, sugar, mushroom powder, and a pinch of salt and pepper.
- Stir in the beef, onions, bay leaf and mushrooms. Pour the pepperoncinis on top, then top with pads of butter.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until beef is fork-tender.
- 30 mins before the cook time is over, mix 2 tablespoons of cornstarch with a few tablespoons of water to make a slurry. Stir it into the slow cooker and cook on high, uncovered, for another 30 minutes to thicken.
- Taste and adjust seasoning. Serve hot over mashed potatoes, rice, or noodles.
Instant Pot Instructions:
- Add everything to the Instant Pot (except the cornstarch slurry), using 1½ cups beef stock instead of 2 cups.
- Seal and set to “Meat/Stew” or high pressure for 35 minutes.
- Let the pressure naturally release for 10–15 minutes.
- Switch to sauté mode. Stir in the cornstarch slurry and let the gravy bubble and thicken for 1–2 minutes.
