Fall is here, (at least in my heart and mind) and that means it's time for the most adorable, cozy, comforting appley waffle bites!
These Apple Cider Waffle Bites are so good, hardly any of them made it to the table! My family turned into a pack of wolves!

Spiced Sugar:
1/3 cup granulated sugar
1 tsp cinnamon
Optional: 1/4 tsp nutmeg
Waffle Ingredients:
2 C AP flour
4 t baking powder
1 t apple pie spice
1/2 t cinnamon
1/2 t kosher salt
1 T brown sugar
1 egg
1 C buttermilk (or 1 C milk + 1 T vinegar - Google Sour Milk)
1 C apple cider
6 T avocado oil
Instructions:
Make the spiced sugar: Combine brown sugar, cinnamon, nutmeg, and ginger in a small bowl. Set aside.
Prepare the waffle batter: In a large bowl, whisk together dry ingredients: flour, baking powder, and salt. In a medium bowl combine wet ingredients: Egg, buttermilk, Apple Cider, and oil. Create a well in the dry ingredient large bowl and slowly add the wet mixture. Dont over-stir.
Cook the waffles: Preheat your mini waffle iron. Spray with nonstick cooking spray. Pour batter into each waffle section. Cook until golden brown.
Coat with spiced sugar: Immediately roll cooked waffles in spiced sugar.
Enjoy: Serve warm with maple syrup.
