Easy Chicken Gyros

I never thought I’d say this, but I’m officially obsessed with chicken gyros! This recipe was a total game-changer for our family dinner routine. The marinade was incredibly flavorful and so easy to whip up. I was amazed at how tender and juicy the chicken turned out.





One of my favorite parts was experimenting with the sides. I whipped up a quick and easy “tzatziki sauce” (let’s be honest, it’s basically a fancy ranch) for my picky eaters, and it was a huge hit. To go with the gyros, I made a simple salad with feta, capocollo, and croutons, then tossed it in the tzatziki sauce for a refreshing twist. It was the perfect complement to the flavorful chicken.


I honestly couldn’t believe how delicious this entire meal came together. It’s fresh, flavorful, and surprisingly easy to make. Plus, it’s a great option for those warm summer nights. I can’t wait to make this again and again!






Recipe:

MARINADE

  • 3 large garlic cloves, pressed or minced

  • 1 tbsp white wine vinegar

  • 3 tbsp lemon juice

  • 1 tbsp avocado oil

  • 3 tbsp Greek yogurt, Full Fat

  • 1 1/2 tbsp dried oregano

  • 1 tsp salt

  • Black pepper


EASY 5-MINUTE TZATZIKI SAUCE (WITHOUT CUCUMBER)

ingredients

  • 1/2 cup full-fat plain Greek yogurt

  • 1-2 garlic cloves, pressed

  • 3 Tablespoons fresh lemon juice, 1 lemon (If using bottled do 1 T)

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon dried dill

  • 1/4 teaspoon dried parsley

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon salt, more to taste


Instructions:

Preparing the Chicken Marinade:

In a large resealable plastic bag, combine the marinade ingredients: soy sauce, brown sugar, garlic, ginger, and pineapple juice. Mix well to ensure all ingredients are evenly distributed. Add the chicken breasts to the bag, sealing it tightly.Massage the bag gently to ensure the chicken is fully coated in the marinade.


Prepare Tzatziki Sauce:

Combine all ingredients in a jar and mix well. Allow to sit in fridge for at least 30 minutes, the longer the better.


Marinating Time: For optimal flavor, marinate the chicken in the refrigerator for at least 2 hours. For even more intense flavor, marinate overnight. However, avoid marinating for longer than 24 hours as this can toughen the meat.


Cooking the Chicken

Grilling or Pan-Searing: Preheat your grill or a large skillet to medium-high heat. Lightly oil the cooking surface.Remove the marinated chicken from the bag, allowing excess marinade to drip off.


Cook the chicken for approximately 6 minutes per side, or until cooked through and golden brown. For thicker chicken breasts, you may need to adjust cooking times accordingly.


Resting the Chicken: Transfer the cooked chicken to a cutting board and let it rest for 5 minutes. This allows the juices to redistribute, resulting in more tender meat.


Slicing the Chicken: Once rested, thinly slice the chicken against the grain for optimal texture.
