Gochujang Noodle Toss

This Gochujang Noodle Toss is about to be your new obsession! I had no idea what to call this so I landed on, "Gochujang Noodle Toss"!  I think of this recipe as a pantry staple lifesaver! All you need is a few pantry staples and a few minutes to whip it up.



These noodles are so savory and delish, not to mention it's such a quick and easy dinner, this one will go straight to the top of your weeknight dinners!


If you are craving a quick and easy comfort meal, these spicy peanutty noodles are packed with flavor and ready in just 20 minutes!!


With simple ingredients like ramen noodles (I like Momofuku Noodles!), peanut butter, sesame oil, and gochujang, it's the perfect weeknight dinner.


It’s just a simple sauce of soy sauce, peanut butter, garlic and tomato paste, and go-choo-jang, toss it over some noodles with some ground protein and you have a saucy, savory and delicious meal!


This recipe is so quick and easy, trust me, this one will go straight to the top of your weeknight dinners!

Gochujang Noodle Toss Recipe:

Yields: 4 servings Prep time: 10 minutes Cook time: 15 minutes


Ingredients:

For the Gochujang Sauce:

  • 1/4 C + 2 T soy sauce

  • 2-4 T gochujang sauce (Adjust based on spice preference)

  • 1/4 C tomato paste

  • 1/4 C peanut butter

  • 1/4 water

  • 1/2 C brown sugar

  • 2 t sesame oil

  • 2 cloves minced garlic

  • 3/4-1 C broth or water (for thinning the sauce)


For the Noodles and Protein:

  • 1 pound ground pork (or protein of choice)

  • 1 t salt

  • Freshly ground black pepper

  • 4-5 packets ramen or stir-fry noodles (I like momofuku)

  • 1/4 cup scallions

  • Salt to taste


Instructions:

  1. Prepare the sauce: In a small bowl, whisk together all the sauce ingredients except the extra water.

  2. Cook the protein: Heat a large skillet over medium-high heat. Season the ground pork with salt and pepper. Cook until browned and cooked through. Remove from the skillet and set aside.

  3. Cook the noodles: Cook the ramen or noodles to barely done, we don't want them to get soggy. Drain and set aside.

  4. Combine ingredients: In the same skillet as the pork, add your noodles,and gochujang sauce. Toss to combine.

  5. Adjust the sauce: Add extra broth or water as needed to achieve your desired consistency, I like to simmer the water off for a few minutes.

  6. Serve: Top with fresh herbs, scallions, chili oil, sesame seeds, and any additional garnishes you prefer.
