This recipe is all about bold flavors and easy prep. We'll marinate juicy chicken cubes in a sweet and tangy sauce that's bursting with flavor. The best part? It all comes together in just a few simple steps.


Who says you need a backyard grill to get that delicious "off-the-grill" taste? A trusty cast iron griddle is your indoor grilling hero. Heat it up over medium-high heat to get a nice sear on your skewers.

Skewer Up and Get Grilling:

Soak your wooden skewers or use metal skewers for easy cleanup. Thread the marinated chicken cubes onto the skewers,creating a colorful and flavorful kabob masterpiece.

Basting for Extra Flavor:

Remember that reserved marinade we set aside earlier? This becomes your basting buddy! Brush the chicken skewers with the reserved marinade as they cook on the cast iron griddle, adding extra flavor and keeping the chicken moist.


Ingredients:

  • For the Marinade:

  • 2 cloves garlic, minced

  • 1/4 cup honey

  • 3 tbsp sriracha chile sauce

  • 1/4 tsp salt

  • 4 tbsp soy sauce

  • 2 tsp extra virgin olive oil

  • For the Chicken Skewers:

  • 4 boneless, skinless chicken breasts, cut into large cubes

  • Wooden or metal skewers (soaked if using wooden skewers)

Instructions:

  1. Marinate the Magic: In a small bowl, whisk together the minced garlic, honey, sriracha, salt, soy sauce, and olive oil. (Now is the time to soak your wooden skewers)

  2. Prep the Chicken: Place the chicken cubes in a large bowl or resealable bag.

  3. Flavor Infusion: Reserve about 1/4 cup of the marinade for later. Pour the marinade over the chicken, ensuring all the pieces are well coated. Cover the bowl or seal the bag and refrigerate for at least 2 hours, or longer for even more flavorful chicken.

  4. Heat Up the Griddle: Preheat your cast iron griddle over medium-high heat.

  5. Skewer Up: Once the chicken is marinated, thread the chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

  6. Indoor Grilling: Carefully place the skewers on the preheated cast iron griddle.

  7. Basting for Extra Flavor: Using a brush, baste the chicken skewers with the reserved marinade as they cook on the griddle. This will add extra flavor and keep the chicken moist.

  8. Cook to Perfection: Cook the chicken skewers for 8-10 minutes per side, or until the chicken is cooked through and nicely browned.

Tips:

  • Feel free to adjust the amount of sriracha in the marinade depending on your desired spice level.

  • If you don't have a cast iron griddle, a large skillet can also be used.
