Snowballs: The Perfect Christmas Cookie

My in-laws live out of state, so every year, I send them a homemade cookie box. These little gems are my father-in-law’s absolute favorite cookies! Snowballs, also known as Mexican Wedding Cookies or Russian Tea Cakes, are a must-have in my holiday baking lineup. They’re deliciously soft, buttery, and melt-in-your-mouth good.

The best part? You probably already have everything you need to whip up a batch right now! This recipe uses simple pantry staples: butter, flour, powdered sugar, and nuts. It’s this simplicity that makes Snowballs so irresistible. There’s something magical about how a few humble ingredients transform into such an addictive treat.

What Makes Snowballs So Special?

❄️ Classic Flavor: The buttery richness combined with the delicate nuttiness is pure holiday bliss.

❄️ Festive Vibes: Their powdered sugar coating looks just like freshly fallen snow, making them perfect for Christmas gatherings.

❄️ Versatile: Use pecans, walnuts, or even almonds depending on what you have on hand—they’re all delicious!

❄️ Make-Ahead Friendly: These cookies keep beautifully, so they’re ideal for gifting or prepping ahead of the holiday rush.

Ingredients You’ll Need:

  • 1 cup unsalted butter, softened

  • ½ cup granulated sugar

  • 2 teaspoons vanilla extract

  • 2 teaspoons water

  • 2 cups all-purpose flour

  • 1 cup finely chopped walnuts

  • ¼ teaspoon salt

  • ½ cup powdered sugar, or more if needed

How to Make Snowballs:

  1. Mix the Dough: In a large bowl, cream together the softened butter and sugar until light and fluffy. Stir in the vanilla extract and water. Gradually add the flour, salt, and finely chopped nuts. Mix until well combined.

  2. Refrigerate for 1-3 hours!

  3. Prep Your Oven: Preheat the oven to 325°F and line a baking sheet with parchment paper.

  4. Shape the Cookies: Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. No need to flatten them; they’ll hold their shape as they bake.

  5. Bake: Bake for 15-20 minutes, or until the bottoms are just lightly golden. Be careful not to overbake—these cookies are meant to stay pale.

  6. Add the Snow: Let the cookies cool for around 15-30 minutes, then roll them in powdered sugar while they’re still warm. Once fully cooled, give them a second roll in powdered sugar for that perfect snowy finish.

Tips for Perfect Snowballs:

  • Chop Nuts Finely: Finely chopped nuts ensure a uniform texture and prevent the cookies from crumbling.

  • Double Sugar Coating: The first roll in powdered sugar helps it stick, while the second coat adds that dreamy, snow-covered look.

  • Storage: Store in an airtight container at room temperature for up to a week, or freeze for longer storage. They’re just as tasty straight from the freezer!

Why They’re a Holiday Favorite:

Snowballs are more than just cookies—they’re a tradition. Their delicate sweetness and snowy appearance make them the perfect treat to share during the holidays. Plus, they’re a hit with kids and adults alike. Whether you’re adding them to a cookie platter, gifting them in a festive tin, or enjoying them with a cup of coffee by the fire, Snowballs are the ultimate Christmas cookie.

So, grab your apron and get baking! These simple, nostalgic cookies are sure to bring a little extra joy to your holiday season. ❄️❤️
