Ingredients

  • Avocado Oil
  • 1.5 LBS Chicken Breast cut into small pieces
  • 2 scallions chopped with the whites and greens separated
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1.5 teaspoons minced garlic
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder more or less to your liking
  • 1/4 cup cornstarch

Instructions

  • Step 1: Marinate the Chicken: Combine soy sauce, oyster sauce, brown sugar, garlic, pepper, and cornstarch in a bowl and mix well. Add Chicken. Mix well and let marinate for 10 minutes. While the chicken marinates, chop the scallions, keeping the white and green parts separate.
  • Step 2: Pan-fry the Chicken: Heat oil in a non-stick pan over medium heat. Add the marinated chicken and pan-fry until fully cooked, ensuring each piece is golden brown and tender.
  • Step 3: Add Scallions: Stir in the white parts of the scallions and cook until softened. If using larger or bone-in chicken pieces, cover the pan with a lid and cook until the chicken is thoroughly done. Finish by tossing in the green scallion tops and stir for 10–20 seconds to gently wilt them.
  • Step 4: Serve and Garnish: Transfer the chicken to a serving dish and sprinkle with additional pepper or chopped scallions, if desired. Pair with rice or noodles for a complete meal.
