This is my go-to girl dinner. These are the PERFECT Egg Salad Sandwiches!  All you need to have on hand is Eggs, bread, mayo, mustard, and whatever veggies you have lying around (celery, red onion are my faves!) I LOVE red onion in this, it gives such a peppery burst of flavor.

Don’t forget a sprinkle of sugar for that secret sweetness. Pro Tip: Keep pre-cooked hard-boiled eggs on hand for the fastest dinner ever! Toss in some dill and parsley and you are done!

I love to load up my sandwich with my fave dill pickles chopped up, potato chips, and sriracha!

Ingredients

Ingredients:

  • 8 hard-boiled eggs
  • Celery finely chopped (I usually go with 1 Stalk)
  • Red onion finely chopped (I usually just do 1/2-1/4 of the onion)

Dressing Ingredients:

  • 1/3 cup Hellmann’s Mayo Cut in half 2 tablespoons plus 2 teaspoons
  • 2 t lemon juice
  • 2 t Dijon mustard Grey Poupon
  • 1/2 t paprika
  • 1/2 t salt
  • 1/4 t ground pepper
  • 1/4 t dried dill weed
  • 1/4 t freeze dried chives
  • 1 garlic clove pressed

Instructions

  • Hard Boil the Eggs: Cook eggs for 12 minutes, then run under cold water to cool. Peel and chop.
  • Prepare the Dressing: In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, paprika, salt,pepper, dill weed, chives, and minced garlic.
  • Combine Ingredients: In a large bowl, combine chopped eggs, celery, red onion, and dressing. Stir until well combined.
  • Chill and Serve: Refrigerate for at least 30 minutes to allow flavors to meld. Serve on your favorite bread or crackers.
