Ultimate French Onion Cheesy Potatoes with Crispy Chip Topping
Let me just start by saying: if French onion soup and a bag of sour cream & onion chips had a cheesy little baby… this would be it. It’s warm. It’s gooey. It’s got layers. It’s giving comfort food, but make it ✨elevated✨ with a crunchy chip crown that absolutely slaps.
This dish is the side that steals the show, the potato bake that’ll have people asking “who made this?” like you’re some kind of casserole celebrity. It’s perfect for holidays, potlucks, or any night you want to feel like you live inside a cozy food montage from a Nancy Meyers movie.
What’s in it:
- Hashbrowns, soaking in that cheesy sauce like it’s their job
- A super creamy, melty cheese sauce that hugs every bite
- And then—because we love drama—a crispy topping of crushed sour cream & onion chips that takes this dish to “did you seriously just do that?” levels
Why the Chips?
I know. It sounds a little chaotic. But trust me—sour cream & onion chips on top of cheesy potatoes? It’s like adding a crunchy mic drop. They bring this punchy flavor that contrasts beautifully with the creamy layers underneath, and they toast up just right in the oven. Like…crispy in the best way.
TL;DR:
If you’re looking for the side dish that’s gonna get you compliments, leftovers requested, and possibly a marriage proposal or two, this is it. Serve it alongside roast chicken, steak, or honestly just on its own in a big bowl with a fork. No judgment here.
Make it. Eat it. Brag about it.
And don’t forget to tag me when you make it—I need to see those chip-crusted masterpieces.
Ultimate French Onion Cheesy Potatoes with Crispy Chip Topping

Ingredients
- 2 pound bag of frozen hash browns in the video I did diced, but I prefer shredded
- 1 can cream of chicken soup
- 15 ounce jar of French onion chip dip
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 cups shredded cheddar cheese
- 2 cups crumbled Sour Cream and Onion chips
- ¼ cup butter melted
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish with nonstick spray.
- In a large bowl, combine the frozen hash browns, French onion chip dip, cream of chicken soup, 1 cup of the shredded cheddar, onion powder, and garlic powder. Mix everything together until fully combined.
- Transfer the mixture to your prepared baking dish and spread it out evenly.
- Sprinkle the remaining 1 cup of shredded cheddar over the top.
- Bake for 40 minutes.
- Meanwhile, mix the crushed sour cream & onion chips with the melted butter in a bowl.
- After the 40 minutes, remove the dish from the oven and evenly sprinkle the buttery chip mixture over the casserole.
- Return to the oven uncovered and bake for another 20 minutes, or until hot and bubbly and the chips are lightly golden.
- Let it sit for about 5-10 minutes before digging in!
This was so easy to put together. The whole time it was in the oven it just smelled so good cooking. When I finally got to eat it, it was delicious! I will definitely be making again 🙂
