French onion soup meets cheesy potato casserole in the most delicious way possible—topped with crushed sour cream & onion chips for the ultimate crispy finish. It’s rich, creamy, crunchy, and basically your new favorite side dish.

Ultimate French Onion Cheesy Potatoes with Crispy Chip Topping

Ingredients

  • 2 pound bag of frozen hash browns in the video I did diced, but I prefer shredded
  • 1 can cream of chicken soup
  • 15 ounce jar of French onion chip dip
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 2 cups crumbled Sour Cream and Onion chips
  • ¼ cup butter melted

Instructions

  • Preheat your oven to 350°F and grease a 9x13-inch baking dish with nonstick spray.
  • In a large bowl, combine the frozen hash browns, French onion chip dip, cream of chicken soup, 1 cup of the shredded cheddar, onion powder, and garlic powder. Mix everything together until fully combined.
  • Transfer the mixture to your prepared baking dish and spread it out evenly.
  • Sprinkle the remaining 1 cup of shredded cheddar over the top.
  • Bake for 40 minutes.
  • Meanwhile, mix the crushed sour cream & onion chips with the melted butter in a bowl.
  • After the 40 minutes, remove the dish from the oven and evenly sprinkle the buttery chip mixture over the casserole.
  • Return to the oven uncovered and bake for another 20 minutes, or until hot and bubbly and the chips are lightly golden.
  • Let it sit for about 5-10 minutes before digging in!
