Ingredients
- 1 lb. ground beef
- 1 14.5 oz. canned petite diced tomatoes
- 1 Tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- 1/4 tsp oregano
- ½ tsp salt
- ½ tsp black pepper
- Freshly shredded cheese
- Corn tortillas
- Olive oil spray
Instructions
- Preheat oven to 425 degrees and line a sheet pan with parchment paper.
- In a large skillet, cook ground beef it is browned. Add in spices and toast.
- Add in undrained tomatoes. Let simmer until most liquid is absorbed. (About 7-10 minutes)
- Heat tortillas in the microwave until warm. Lay flat on a baking sheet and spray with oil. Top half with cheese, then beef then more cheese. Fold over.
- Bake 8-9 minutes, flipping halfway through. Bake longer if not crispy enough.
