Why You’ll Love These Verde Chicken Enchiladas with Roasted Corn

This is one of my favorite dinners right now, and honestly… it makes sense.

It is basically what would happen if street corn and green chicken enchiladas had a baby. A bubbly, cheesy, creamy, slightly smoky baby that gets baked under green enchilada sauce and Pepper Jack cheese.

These verde chicken enchiladas are filled with shredded chicken, fire-roasted corn, diced green chiles, Pepper Jack, Cotija, cilantro, and a creamy corn sauce made with mayo, Greek yogurt, lime, adobo sauce, chili powder, garlic powder, cumin, salt, and pepper.

So yes, they are chicken enchiladas. But they are not boring chicken enchiladas.

They are creamy, smoky, tangy, melty, and just a little messy in the best possible dinner way.

Why These Verde Chicken Enchiladas Work

The filling is what makes these enchiladas feel different.

Instead of just chicken and cheese, the shredded chicken gets mixed with fire-roasted corn, green chiles, Cotija, cilantro, and Pepper Jack. Then everything gets coated in a creamy street-corn-inspired sauce before being rolled into flour tortillas.

The mayo and Greek yogurt make the filling creamy without making it feel too heavy. The lime juice brightens everything up, and the adobo sauce adds a smoky little kick that makes the whole thing taste more interesting.

It is the kind of filling that tastes good before it even goes into the tortillas, which is always a very good sign.

The Roasted Corn Makes It Better

Fire-roasted corn is a small shortcut that does a lot of work here.

It adds sweetness, a little smoky flavor, and that street-corn-ish vibe without needing to grill corn yourself or turn dinner into a whole production. We love flavor. We do not always love extra steps.

And because we are using a little Greek yogurt with the mayo, it still tastes creamy but has a bit of brightness too.

Basically, regular enchilada filling got a personality.

Why Use Green Enchilada Sauce?

Green enchilada sauce keeps these enchiladas bright and savory, and it works so well with the roasted corn, green chiles, lime, and Pepper Jack.

It also makes the whole dish feel a little fresher than a heavier red sauce enchilada. Not health food exactly, let’s not get delusional, but definitely fun and flavorful and very much a dinner I want on repeat.

You spread a little sauce on the bottom of the baking dish, roll up the filling in warm tortillas, pour the rest of the sauce over the top, and finish with more Pepper Jack.

Then the oven does what the oven does best: makes everything bubbly and melty.

Tips for the Best Verde Chicken Enchiladas

Rotisserie chicken works great here and keeps this recipe easy enough for a weeknight. You can also use any cooked shredded chicken you already have.

Warm the tortillas before rolling so they are easier to work with and less likely to crack. Just 20 to 30 seconds in the microwave helps a lot.

Do not skip the sauce on the bottom of the baking dish. It helps keep the enchiladas from sticking and makes sure the bottoms stay soft and flavorful.

If you want that slightly browned, bubbly cheese moment, broil the enchiladas for 1 to 2 minutes at the end. Just keep an eye on them because broilers love chaos.

Make-Ahead Tip

The filling can be made up to one day in advance and stored in the refrigerator until you are ready to assemble and bake.

This is especially helpful if you want dinner to feel easier later, which is honestly the entire point of cooking ahead. Future you deserves nice things.

How to Serve Them

Serve these verde chicken enchiladas warm with crumbled Cotija, fresh cilantro, lime wedges, and jarred jalapeños if you want a little extra tangy heat.

They are great on their own, but chips and queso would obviously not be a bad idea. I mean, we have already committed to the melty cheese lifestyle. Might as well lean in.

These enchiladas are creamy, cheesy, smoky, and bright with just enough roasted corn sweetness to make them feel different from your usual chicken enchilada night.

Ingredients

Chicken Filling

  • 2 cups cooked shredded chicken rotisserie works great
  • cups fire-roasted corn
  • ½ cup shredded Pepper Jack cheese
  • ¼ cup crumbled Cotija cheese
  • ¼ cup diced green chiles
  • 3 tablespoons chopped fresh cilantro

Creamy Corn Sauce

  • ½ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • Juice of 1 lime
  • 1 –2 teaspoons adobo sauce from canned chipotle peppers
  • 1 teaspoon chili powder
  • teaspoons garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Assembly

  • 8 fajita-size flour tortillas
  • 1 12-ounce can green enchilada sauce
  • 1 cup shredded Pepper Jack cheese
  • For Serving
  • Crumbled Cotija cheese
  • Chopped cilantro
  • Lime wedges
  • Jarred sliced jalapeños optional

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, combine the shredded chicken, fire-roasted corn, Pepper Jack cheese, Cotija cheese, green chiles, and cilantro.
  • In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, adobo sauce, chili powder, garlic powder, cumin, salt, and black pepper until smooth.
  • Pour the creamy sauce over the chicken mixture and stir until everything is evenly coated.
  • Spread about ½ cup of the green enchilada sauce over the bottom of a greased 9×13-inch baking dish.
  • Warm the tortillas for 20–30 seconds in the microwave to make them easier to roll.
  • Divide the filling evenly among the tortillas. Roll tightly and place seam-side down in the baking dish.
  • Pour the remaining enchilada sauce evenly over the enchiladas.
  • Sprinkle with the remaining 1 cup Pepper Jack cheese.
  • Bake uncovered for 20-25 minutes, or until the cheese is melted and the sauce is bubbling.
  • Broil for 1–2 minutes at the end if you’d like the cheese lightly browned.
  • Top with crumbled Cotija cheese, fresh cilantro, a squeeze of lime juice, and sliced jarred jalapeños if desired.
  • Serve warm.
