What I Eat in a Day | Down 62 Pounds

This is my brutally honest what I eat in a day, being down 62 pounds.

And honestly, I am not eating 5 or 6 times a day like I see in some of these videos. Most days, it is more like 2 to 3 meals, and I am just trying to make those meals count.

Very wellness-influencer-adjacent. Not fully there. But we are in the neighborhood.

Lately, I have been really trying to get my fiber up because I realized I was only getting around 4 to 6 grams a day, which is… not ideal. My goal is closer to 25 grams a day, so this is very much a work in progress.

I am also still working on getting enough protein in, but I am trying not to make every single thing a crisis. We are taking steps forward. We love a slow glow-up.

For breakfast, I had my pumpkin pie in a bowl, which was about 300 calories and 6 grams of fiber. It tastes cozy, keeps things simple, and honestly anything pumpkin makes me feel like I have my life together for at least 12 minutes.

For a snack, I made a loaded salsa bean snack bowl. This was about 280 calories and 8 grams of fiber. Beans have been one of the easiest ways for me to add fiber without overthinking it. They are filling, affordable, and very much doing the heavy lifting in my “please improve your digestion” era.

For dinner, I had ranch BBQ chuck tacos. I did 3 tacos, which was about 810 calories, 45 grams of protein, and 4 grams of fiber. They were saucy, filling, and honestly such a good reminder that weight loss meals do not have to be sad little lettuce situations.

My estimated day total was around 1,390 calories, 18 grams of fiber, and roughly 65 to 75 grams of protein.

So no, I did not magically hit every single goal. The fiber was still lower than where I want it to be, and I know my protein could be better too. But compared to where I started, this is a huge step forward.

Progress over perfection, because perfection is annoying and probably doesn’t eat BBQ tacos.

Pumpkin Pie in a Bowl ⭐

Pumpkin Pie Oatmeal

Ingredients

  • ½ cup Quaker old-fashioned oats 40g
  • ¼ cup 60g Libby’s pumpkin purée
  • 1 cup water
  • 2 tablespoons whole milk
  • 1 tablespoon brown sugar
  • 1 teaspoon Iowa Gold maple syrup
  • 1 teaspoon pepitas
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • Pinch of salt
  • ½ Honey Maid graham cracker sheet crushed

Instructions

  • In a small saucepan, combine the oats, water, pumpkin purée, pumpkin pie spice, vanilla, and salt.
  • Bring to a gentle simmer and cook for 5–7 minutes, stirring occasionally, until the oats are tender.
  • Stir in the whole milk, brown sugar, and maple syrup.
  • Pour into a bowl and top with the crushed graham cracker and pepitas.

Ingredients

Bean & Corn Base (Makes 3 servings)

  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 2 tablespoons salsa

For Each Serving

  • 1 cup bean & corn mixture
  • 2 tablespoons shredded Mexican-style cheese
  • 1 tablespoon Daisy sour cream
  • Extra salsa to taste
  • 1 serving Hy-Vee Bite Size White Corn Tostados

Instructions

  • In a medium bowl, stir together the black beans, corn, and 2 tablespoons of salsa.
  • Divide the mixture evenly into 3 meal prep containers (about 1 cup per container).
  • When ready to eat, top with the shredded cheese, sour cream, and additional salsa.
  • Serve with Hy-Vee Bite Size White Corn Tostados for scooping.
