Fall is back baby!! The Fall drinks are back at Starbucks and school is back in session…  and I’m ready to start watching Gilmore Girls again.

So, Let’s make the best dang apple crisp you’ve ever had! I love keeping it simple: Just chop those apples, peel and all, and toss ’em in the dish.

I’ve tried dozens of recipes and I’ve perfected this recipe to absolute perfection! The secret? That cookie-ish oatmeal topping! Even if you’re not a huge oatmeal fan, this is a must-try. It’s so cinnamon-y and delicious, you’ll love it.

Ingredients

Fruit Filling:

  • 6 ish apples cut into wedges (I don’t mind them unpeeled, my family prefers peeled)
  • 1 T lemon juice
  • 1/2 C sugar
  • 2 T flour

Topping:

  • 1/2 C rolled oats
  • 1/2 cup light brown sugar
  • 1 1/4 C flour
  • 1 t ground cinnamon
  • 1/4 t salt
  • 12 T butter 1 1/2 sticks, chilled and cut into small pieces

Instructions

  • Preheat oven to 350°F (175°C). Butter a 2-quart baking dish.
  • Prepare the Filling: In the prepared dish, combine apples, lemon juice, sugar, and flour. Toss to coat.
  • Make the Topping: In a bowl, combine flour, oats, brown sugar, cinnamon, and salt. Cut in butter (use a pastry cutter, food processor or your hands) until mixture resembles coarse crumbs.
  • Assemble: Sprinkle topping evenly over fruit filling.
  • Bake: Bake until fruit is bubbling and topping is golden brown, about 45 minutes.
  • Serve: Serve warm with vanilla bean ice cream or fresh whipped cream.
