Jump to Recipe

Brace yourselves—because once you’ve tasted these Mexican Drowned Tacos, your taco game will never be the same! These crispy, queso-drenched beauties are the ultimate crowd-pleaser, and I promise, they’ll be the MVP of your next game-day spread. My family is obsessed, and trust me, your crew will be too!

What’s the secret to their irresistible flavor? It’s Red Gold® Diced Tomatoes with Green Chiles. Seriously, these little cans of flavor magic take my Party Queso to the next level. The combination of diced tomatoes and green chiles adds the perfect amount of zest and spice to this queso, making it absolutely irresistible.

The Game Plan

Here’s how we’re bringing these tacos to life:

  1. Start with the Queso: Brown some chorizo and ground beef, then layer it over a block of meltable cheese, cream cheese, salsa, shredded cheese, taco seasoning, and—of course—Red Gold® Diced Tomatoes with Green Chiles. Stir it all together and let it melt into the most flavorful, creamy queso you’ve ever tasted.
  2. Taco Time: While your queso is bubbling away, fill corn tortillas with your favorite taco filling. We’re talking shredded chicken, seasoned beef, or even just beans and cheese for a vegetarian twist. Fry them up to crispy, golden perfection.
  3. Assemble the Masterpiece: Here’s where the magic happens. Grab a sturdy cup or bowl and pour a generous layer of that dreamy queso on the bottom. Add your toppings—like shredded lettuce, pico de gallo, and sour cream—then crown the whole thing with your crispy tacos.
  4. Dunk and Devour: The real fun starts when you dunk those tacos into the queso. It’s crispy, cheesy, melty perfection in every bite.

Why I Love Red Gold®

Red Gold® Diced Tomatoes with Green Chiles aren’t just an ingredient—they’re the secret weapon that brings this dish to life. The bold flavors of vine-ripened tomatoes and just the right kick of green chiles make this queso something truly special. Plus, it’s a brand you can trust to deliver quality every time.

Ingredients

BEST Party Queso Recipe:

  • 1/2 LB Chorizo
  • 1/2 LB Ground Beef
  • 1 can Red Gold Diced Tomatoes w/green chilis
  • Sliced Jalapenos couple spoonfuls, adjust to your preference
  • 1 block of Cream Cheese
  • 1-2 cups of shredded Cheese
  • 1 pack Taco Seasoning
  • 1/2 cup of your favorite salsa
  • 16 oz. Meltable Cheese Product cubed
  • 2 tablespoons whole whipping cream optional

Tacos:

  • 1.25 LB Ground Beef
  • 1 Packet of Taco Seasoning
  • ¾ Cup Water
  • 20 Corn Tortillas

Instructions

Queso Instructions:

  • Get cooking: Preheat your oven to 350°F (190°C)
  • Cook the meats: Brown the ground beef and chorizo and drain any excess grease.
  • Combine ingredients: Mix the cooked meats with the remaining ingredients in your baking dish (or a disposable tin foil dish).
  • Bake or grill: Place the dish in the oven for 20-25 minutes until melted and bubbly. Stir halfway through!
  • Add a touch of cream: For an extra creamy texture, stir in 2 tablespoons of whole whipping cream at the end. If it’s too thick add some more salsa with the juice!

Tacos:

  • Prepare your taco filling: Brown your ground beef. Once cooked through, add your taco seasoning and water. Simmer for 4-5 minutes.
  • Heat the tortillas in the microwave until soft and pliable.
  • Place a tortilla flat on a surface and add some taco filling to one side.
  • Roll the tortilla tightly into a tube-like shape. Place it seam-side down or secure it with a toothpick. Repeat until all tortillas and filling are used.
  • Heat about 1 ½ cups of oil in a pan and fry the flautas in batches until crisp and golden.
  • Remove them and place them on a lined paper plate or a cooling rack.
  • Place queso and other toppings at the bottom of your cup. Lastly, add in the tacos. Enjoy

Notes

This yields about 20 tacos or 10 Servings/Cups for Game Day (with tons of queso left over!); you may want to double the taco recipe if you have more than eight people.
