Ingredients

For the Filling:

  • 2 tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • Cooked shredded chicken I used poached chicken breasts or rotisserie works too!
  • 1 can 10.5 oz cream of chicken soup
  • 2 cups chicken broth
  • 3 teaspoons garlic powder
  • 3 teaspoons onion powder
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice plus zest from 1 lemon
  • ½ tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 tsp fresh dill or ½ tsp dried
  • 1 ½ cups frozen peas & carrots no need to thaw

For the Cheddar Bay Biscuit Topping:

  • 1 package Red Lobster Cheddar Bay Biscuit Mix or homemade version
  • ½ cup shredded sharp cheddar cheese if not using mix
  • ¾ cup milk

For the Buttery Garlic Topping:

  • 2-4 tbsp butter melted
  • Cheddar bay topping mix

Instructions

1️⃣ Preheat & Prep the Filling

  • Preheat oven to 375°F.
  • In a large oven-safe skillet or baking dish, melt butter over medium heat.
  • Sauté the onions until soft (about 3 minutes), then add garlic and cook for another 30 seconds.

2️⃣ Build the Creamy Lemon-Dill Chicken Filling

  • Turn off the heat. In the same dish stir in the chicken and remaining filling ingredients.

3️⃣ Make the Cheddar Bay Biscuit Dough

  • In a bowl, mix biscuit mix, milk, cheddar cheese (if using), and melted butter until just combined.
  • Drop spoonfuls of dough over the filling. No need to spread—rustic is best!

4️⃣ Bake to Golden Perfection

  • Bake uncovered for 25-30 minutes, until the biscuits are golden brown and cooked through.
  • If biscuits brown too quickly, cover loosely with foil.

  • Mix melted butter, garlic powder, and parsley.
