Springtime Chicken Cobbler with Lemon & Dill (Cheddar Bay Biscuit Topping)

Ingredients
For the Filling:

For the Cheddar Bay Biscuit Topping:

package Red Lobster Cheddar Bay Biscuit Mix
or homemade version

cup
shredded sharp cheddar cheese
if not using mix

milk
For the Buttery Garlic Topping:

butter

Instructions
1️⃣ Preheat & Prep the Filling
Preheat oven to 375°F.
In a large oven-safe skillet or baking dish, melt butter over medium heat.
Sauté the onions until soft (about 3 minutes), then add garlic and cook for another 30 seconds.
2️⃣ Build the Creamy Lemon-Dill Chicken Filling
Turn off the heat. In the same dish stir in the chicken and remaining filling ingredients.
3️⃣ Make the Cheddar Bay Biscuit Dough
In a bowl, mix biscuit mix, milk, cheddar cheese (if using), and melted butter until just combined.
Drop spoonfuls of dough over the filling. No need to spread—rustic is best!
4️⃣ Bake to Golden Perfection
Bake uncovered for 25-30 minutes, until the biscuits are golden brown and cooked through.
If biscuits brown too quickly, cover loosely with foil.
5️⃣ Brush on Buttery Garlic Topping
Mix melted butter, garlic powder, and parsley.
Brush over the biscuits right after baking for that signature Cheddar Bay Biscuit flavor.
