How to Make Crispy Honey Lemon Pepper Wings at Home
We are officially entering football season, which means I am legally required to perfect a new wing recipe.
These crispy honey lemon pepper wings are baked, sticky, buttery, sweet, lemony, peppery, and honestly way easier than they taste. We are keeping this one super simple because sometimes wing night does not need to become a three-day emotional project.
The wings get patted extremely dry, seasoned, baked on a wire rack until crisp, tossed in a honey lemon pepper butter sauce, then popped back into the oven for just a few minutes so the glaze gets sticky and perfect.
Basically, these are the wings I want on a game day plate with ranch, napkins, and zero plans to be graceful.
Why You’ll Love These Honey Lemon Pepper Wings
These wings are crispy, saucy, and full of flavor without needing a deep fryer.
The seasoning is simple: lemon pepper, paprika, garlic powder, sea salt, and freshly ground pepper. Then the glaze brings everything together with melted butter, honey, lemon zest, lemon juice, lemon pepper seasoning, and optional crushed red pepper if you want a little kick.
They are sweet, savory, bright, buttery, and just sticky enough to feel like proper football food.
And because they are baked on a wire rack, the hot air can circulate around the wings instead of the bottoms sitting in their own juices. Translation: no soggy wings.
A Note About Wing Size and Oven Temperature
This is important: I used smaller wings, and my oven runs hot.
For me, baking the wings at 425°F for 15 minutes, flipping, then baking for 5 more minutes worked really well. After that, I temped one of the largest wings and it was around 175°F, which is my favorite range for wings because they are cooked through and still juicy.
But if your oven runs cooler or your wings are larger, you will probably need more time.
Do not rely only on the clock here. Temp one of the largest wings. Chicken is safe at 165°F, but wings are often better closer to 175°F to 185°F because the connective tissue has more time to break down and the texture is better.
The goal is crispy skin, juicy meat, and no surprise undercooked moment. Nobody invited that.
Keep It Simple or Make Them Extra Crispy
I kept this recipe super simple because I wanted an easy baked wing recipe that still felt game-day worthy.
But if you want to take the skin even crispier, you have options.
You can air-dry the seasoned wings uncovered in the refrigerator for a few hours or overnight. This helps dehydrate the skin so it crisps up better in the oven.
You can also toss the wings with baking powder before baking. Use about 1 teaspoon baking powder per pound of wings. Baking powder helps raise the pH of the skin, which can encourage better browning and crunch.
Just make sure you use baking powder, not baking soda. Baking soda will taste bitter and weird, and then everyone will be silently mad at the wings.
A very light dusting of cornstarch can also help with extra crunch. The key word is light. We want crispy wings, not wings wearing a full winter coat.
The Honey Lemon Pepper Sauce
The sauce is the whole reason these wings feel special.
It is made with melted butter, honey, lemon zest, fresh lemon juice, lemon pepper seasoning, and optional crushed red pepper. The butter makes it rich, the honey makes it sticky, and the lemon keeps it bright instead of too sweet.
After the wings bake, toss them in the sauce, then return them to the oven for just 2 to 3 minutes. This helps set the glaze so it gets sticky and glossy without burning.
Do not walk away during this part. Honey can go from perfect to “well, that escalated” pretty fast.
Tips for the Best Baked Lemon Pepper Wings
- Pat the wings extremely dry before seasoning. This is one of the biggest things you can do for crispier baked wings.
- Use a wire rack over a baking sheet so the wings are lifted up and heat can circulate around them.
- Flip the wings halfway through baking so both sides get color.
- Temp the largest wing before adding the sauce. If it is around 175°F or higher, you are ready for the glaze.
- After saucing, only return the wings to the oven for a few minutes. You are setting the glaze, not starting a second bake.
How to Serve Them
Serve these honey lemon pepper wings hot with extra lemon wedges, ranch, blue cheese, or whatever dip situation your house believes in.
They are perfect for football season, game day, casual weekends, or anytime you want wings without frying.
Crispy baked wings, buttery honey lemon pepper glaze, a little sticky finish, and barely any fuss.
These might be the wings of the season.
Ingredients
Wingys
- 2 – 2.5 pounds chicken wings drums and flats
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 2 teaspoons lemon pepper seasoning
- Kosher salt to taste
- Freshly ground pepper to taste
Sauce
- ⅓ cup honey
- ¼ cup butter melted
- lemon juice from half a lemon
- Zest from 1 lemon
- 2 teaspoons lemon pepper seasoning
- ½ teaspoon crushed red pepper optional
Instructions
- Preheat the oven to 425°F. Place a wire rack over a baking sheet.
- Pat the chicken wings extremely dry with paper towels. This helps the skin crisp in the oven.
- Add the wings to a large bowl and season with lemon pepper seasoning, paprika, garlic powder, sea salt, and freshly ground pepper. Toss until evenly coated.
- Arrange the wings on the wire rack in a single layer, leaving a little space between each wing.
- Bake for 15 minutes.
- Flip the wings and bake for another 5 minutes.
- Temp one of the largest wings. If it is around 175°F or higher, the wings are ready for sauce. If your wings are larger or your oven runs cooler, continue baking and check every few minutes.
- While the wings bake, make the honey lemon pepper sauce. In a small bowl, stir together the melted butter, honey, lemon zest, lemon juice, lemon pepper seasoning, and crushed red pepper, if using.
- Transfer the baked wings to a large bowl. Pour the honey lemon pepper sauce over the wings and toss until evenly coated.
- Return the sauced wings to the wire rack.
- Bake for another 2–3 minutes, just until the glaze is sticky and set. Watch closely so the honey does not burn.
- Serve hot.
Notes
- I used smaller wings and my oven runs hot, so my wings cooked quickly. If your wings are bigger or your oven runs cooler, you may need to add more time.
- Always temp one of the largest wings instead of relying only on the clock.
- Chicken is safe at 165°F, but wings often have a better texture around 175°F to 185°F.
- For extra crispy skin, air-dry the seasoned wings uncovered in the refrigerator for a few hours or overnight before baking.
- For an extra crispy option, toss the wings with 1 teaspoon aluminum-free baking powder per pound of wings before baking. Do not use baking soda.
- A tiny amount of cornstarch can also help with extra crunch, but use a light dusting so the wings do not taste powdery.
- Use a wire rack so heat can circulate around the wings and help the skin crisp.
- After adding the honey lemon pepper sauce, only return the wings to the oven for a few minutes to set the glaze.
