Lately, I’ve been obsessed with this Egg Salad Sandwich—it’s my go-to girl dinner. Classic, easy, and totally customizable. Here’s how I make mine:

🥚 What you need:

  • Hard-boiled eggs
  • Bread (anything you love!)
  • Mayo & mustard (add a little Dijon for that extra zip)
  • Veggies (I love red onion and celery for crunch and flavor)
  • A sprinkle of sugar for that lowkey sweetness
  • Fresh dill or parsley if you have it

Then I load it up with chopped dill pickles, a dash of sriracha, and—yes—a handful of Miss Vickie’s chips right on top. It’s got crunch, it’s got heat, it’s got FLAVOR.

Ingredients

  • 8 hard-boiled eggs
  • Celery finely chopped I usually go with 1 Stalk
  • Red onion finely chopped I usually just do 1/2-1/4 of the onion
  • 1 bag Miss Vickie's Spicy Dill Pickle Chips

Dressing Ingredients:

  • 1/3 cup Mayo If you cut in half it’s 2 tablespoons plus 2 teaspoons
  • 2 t lemon juice
  • 2 t Dijon mustard Grey Poupon
  • 1/2 t paprika
  • 1/2 t salt
  • 1/4 t ground pepper
  • 1/4 t dried dill weed
  • 1/4 t freeze dried chives
  • 1 garlic clove pressed

Instructions

  • Hard Boil the Eggs: Cook eggs for 12 minutes, then run under cold water to cool. Peel and chop.
  • Prepare the Dressing: In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, paprika, salt, pepper, dill weed, chives, and minced garlic.
  • Combine Ingredients: In a large bowl, combine chopped eggs, celery, red onion, and dressing. Stir until well combined.
  • Chill and Serve: Refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve on your favorite bread, and be sure to add a handful of chips and then CRUNCH them down!!!
