2large yellow onionssliced into ½-inch thick rings
1½cupsall-purpose flour½ cup for one bowl, 1 cup for another
¼cupcornstarch
1cuppanko breadcrumbs
1cupclub soda or sparkling water
1tbspparsleyoptional

½tbsponion powder
½tbspsmoked paprika
1tspchicken seasoning

Instructions
Prep the Onions: Peel and slice onions into ½-inch rings. Gently separate layers.
Mix the Batter: In one shallow bowl, whisk together 1 cup flour, cornstarch, smoked paprika, garlic powder, onion powder, chicken seasoning, cayenne (if using), salt, pepper, and club soda until smooth.
Set Up the Coating Stations:
Bowl 1: ½ cup flour with a little salt and pepper.
Bowl 2: The wet batter.
Bowl 3: Panko breadcrumbs mixed with parsley and a pinch of salt.
Heat the Oil: In a large pot, heat neutral oil to 350°F (175°C).
Coat the Rings: Dip each onion ring first into the flour, then into the wet batter, letting excess drip off, and finally into the panko.
