For the Honey Mustard Sauce:
1/4cupmayonnaise
2tablespoonshoney
2tablespoonsprepared yellow mustard
1tablespoonDijon mustard

Instructions
Make the Honey Mustard Sauce:
In a small bowl, whisk together the honey mustard ingredients. Put in fridge to rest. It's best to make this at least an hour before using, but you can do less in a pinch!
Prepare the Chicken:
Cut the chicken breasts into bite-sized cubes (about 1-inch pieces). Season with salt, pepper, and garlic powder, onion powder, and paprika.
Set Up Dipping Stations:
In one bowl, place the flour.
In another bowl, whisk the eggs until smooth.
In a third bowl, place the crushed honey mustard pretzels. Use a rolling pin or food processor to crush the pretzels into coarse crumbs.
Coat the Chicken:
Dredge each chicken piece in the flour, shaking off any excess.
Dip the floured chicken into the egg mixture, allowing any excess egg to drip off.
Finally, coat the chicken in the pretzel crumbs, pressing gently to ensure a thick coating.
Cook the Chicken Bites:
Heat oil in a large skillet over medium heat.
Once the oil is hot, carefully add the chicken pieces in a single layer. Cook for about 4-5 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
