Ingredients

  • 1 lb chicken breast cut into pieces
  • 1 tbsp avocado oil
  • 1 lb sausage sliced
  • Blues Hog Cajun seasoning
  • 1/2 onion diced
  • 3-4 cloves garlic minced
  • cups orzo
  • 3 cups chicken broth
  • ½ cup heavy whipping cream
  • ½ cup shredded Parmesan
  • salt and pepper, to taste

Instructions

  • Season the chicken breast & sausage with Cajun seasoning.
  • Heat oil in a skillet and brown the chicken pieces. Remove from pan.
  • Add the sliced Cajun sausage and cook until browned. Remove from pan.
  • Add more oil if needed and Sauté the diced onion until tender, then add the minced garlic.
  • Stir in the orzo and toast it for a few minutes.
  • Pour in the chicken broth and bring it to a boil.
  • Add salt, pepper, or more Cajun seasoning if needed.
  • Simmer the mixture until the orzo is tender and most of the liquid is absorbed.
  • Stir in the heavy cream and shredded Parmesan until the sauce is creamy.
  • Return the cooked chicken and sausage to the pan, mix everything together, and serve!
