Prep Time:5 minutes
Cook Time:25 minutes
Marinating Time:2 hours
Total Time:2 hours 30 minutes

Ingredients

For the Marinade:

  • 2 cloves garlic minced
  • 1/4 cup honey
  • 3 tbsp sriracha chile sauce
  • 1/4 tsp salt
  • 4 tbsp soy sauce
  • 2 tsp extra virgin olive oil

For the Chicken Skewers:

  • 4 boneless skinless chicken breasts, cut into large cubes
  • Wooden or metal skewers soaked if using wooden skewers

Instructions

  • Marinate the Magic: In a small bowl, whisk together the minced garlic, honey, sriracha, salt, soy sauce, and olive oil. (Now is the time to soak your wooden skewers)
  • Prep the Chicken: Place the chicken cubes in a large bowl or resealable bag.
  • Flavor Infusion: Reserve about 1/4 cup of the marinade for later. Pour the marinade over the chicken, ensuring all the pieces are well coated. Cover the bowl or seal the bag and refrigerate for at least 2 hours, or longer for even more flavorful chicken.
  • Heat Up the Griddle: Preheat your cast iron griddle over medium-high heat.
  • Skewer Up: Once the chicken is marinated, thread the chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  • Indoor Grilling: Carefully place the skewers on the preheated cast iron griddle.
  • Basting for Extra Flavor: Using a brush, baste the chicken skewers with the reserved marinade as they cook on the griddle. This will add extra flavor and keep the chicken moist.
  • Cook to Perfection: Cook the chicken skewers for 8-10 minutes per side, or until the chicken is cooked through and nicely browned.
  • Serve and Savor: These delicious indoor chicken skewers are perfect on their own or served alongside your favorite summer sides. Enjoy!

Notes

Tips:

  • Feel free to adjust the amount of sriracha in the marinade depending on your desired spice level.
  • If you don't have a cast iron griddle, a large skillet can also be used.
  • Chicken is cooked through when it reaches an internal temperature of 165°F (74°C). Use a meat thermometer to check for doneness.
  • Leftover chicken skewers can be stored in an airtight container in the refrigerator for up to 3 days.
