Ingredients

  • Wonton wrappers
  • Mozzarella sticks cut into thirds
  • 1 egg beaten (for egg wash)
  • Homemade pizza sauce
  • Pepperoni slices
  • Avocado Oil Spray

Instructions

  • Prep your ingredients: Cut your mozzarella sticks into thirds so each piece is about 1-1.5 inches long. Beat the egg in a small bowl and set aside. Get your pizza sauce and pepperoni ready. Line a baking sheet with parchment paper for holding the assembled egg rolls before air frying.
  • Set up your assembly station: Lay out your wonton wrappers and have your sauce, mozzarella pieces, pepperoni, and egg wash all within easy reach.
  • Fill the wonton wrappers: Place one wonton wrapper on a clean surface so it looks like a diamond (one corner pointing toward you). Add about 1 teaspoon of pizza sauce to the center. Place one piece of cut mozzarella stick on top of the sauce, then add 2-3 pepperoni slices.
  • Roll them up: Fold the bottom corner up over the filling. Fold in the left and right corners toward the center. Roll tightly toward the top corner, like you're making a tiny burrito. Use your finger or a brush to brush a little egg wash on the top corner to seal it closed. Place seam-side down on your prepared baking sheet. Repeat with remaining wrappers and filling.
  • Preheat your air fryer: Preheat your air fryer to 375°F for about 3-5 minutes.
  • Spray with oil: Arrange the egg rolls in a single layer in your air fryer basket, making sure they're not touching or overlapping. Spray all sides generously with avocado oil spray. This is what helps them get golden and crispy!
  • Air fry: Air fry at 375°F for 4-8 minutes, flipping them halfway through (around the 4-5 minute mark) and giving them another spray of avocado oil on the other side. They're done when they're deep golden brown and crispy all over.
  • Work in batches: If all your egg rolls don't fit in one layer, work in batches. The air fryer stays hot, so subsequent batches usually cook a tiny bit faster.
  • Serve immediately: These are best enjoyed hot and fresh! Serve with extra pizza sauce, marinara, ranch, or your favorite dipping sauce. Watch them disappear in seconds.
