Gochujang Noodle Toss
Total Time:30 minutes

Ingredients

For the Gochujang Sauce:

  • 1/4 C + 2 T soy sauce
  • 2-4 T gochujang sauce Adjust based on spice preference
  • 1/4 C tomato paste
  • 1/4 C peanut butter
  • 1/4 water
  • 1/2 C brown sugar
  • 2 t sesame oil
  • 2 cloves minced garlic
  • 3/4-1 C broth or water for thinning the sauce

For the Noodles and Protein:

  • 1 pound ground pork or protein of choice
  • 1 t salt
  • Freshly ground black pepper
  • 4-5 packets ramen or stir-fry noodles I like momofuku
  • 1/4 cup scallions
  • Salt to taste

Instructions

  • Prepare the sauce: In a small bowl, whisk together all the sauce ingredients except the extra water.
  • Cook the protein: Heat a large skillet over medium-high heat. Season the ground pork with salt and pepper. Cook until browned and cooked through. Remove from the skillet and set aside.
  • Cook the noodles: Cook the ramen or noodles to barely done, we don't want them to get soggy. Drain and set aside.
  • Combine ingredients: In the same skillet as the pork, add your noodles, and gochujang sauce. Toss to combine.
  • Adjust the sauce: Add extra broth or water as needed to achieve your desired consistency, I like to simmer the water off for a few minutes.
  • Serve: Top with fresh herbs, scallions, chili oil, sesame seeds, and any additional garnishes you prefer.
