Ingredients

  • Oil for frying
  • ¾ cup low-moisture mozzarella shredded
  • ½ cup finely chopped pepperoni
  • ¼ cup pizza sauce
  • 8 egg roll wrappers cut into quarters

Instructions

  • Make the Filling: In a mixing bowl, combine shredded mozzarella, pizza sauce, and diced pepperoni (or any toppings of your choice). Stir everything together until well mixed.
  • Assemble the Pizza Rolls: Lay out the quartered egg roll wrappers on a clean surface. Place 1-2 teaspoons of filling in the center of each wrapper. Lightly moisten the edges with water using your fingertip or a pastry brush. Fold the wrapper over the filling and firmly press the edges to seal. Repeat with the remaining wrappers and filling.
  • Pan-Fry to Perfection: Heat a generous layer of oil in a large skillet over medium heat, ensuring it’s at least ⅛ inch deep. Once the oil reaches about 300°F, carefully place a few pizza rolls in the pan. Fry for about 1 minute per side, flipping once, until they’re golden brown and crispy. As soon as they puff up, transfer them to a paper towel-lined plate to drain excess oil.
  • Time to Dig In! Let the pizza rolls rest for a minute or two before serving (because molten cheese burns are real). Enjoy hot with your favorite dipping sauce!
