Sauté the aromatics: In a large pot, heat olive oil over medium-high heat. Add onion and garlic, sauté until softened.
Brown the beef: Add ground beef and cook until browned. Drain any excess grease.
Add the sauce: Stir in tomatoes, tomato sauce + paste, water, bouillon, Italian Seasoning, salt, and pepper. Give it a stir and heat to simmering.
Add pasta: Add preferred noodles (Bowtime or broken-up lasagna pieces). Reduce heat to a medium simmer and cook soup on a low simmer for 10 to 15 minutes until pasta is cooked to your liking, stirring every few minutes.
Add cheeses: Stir in your favorite toppings such as, mozzarella, Parmesan, and ricotta.
