Prepare the Dressing: Combine all the dressing ingredients in a blender or food processor and blend until smooth and creamy. Put in refrigerator.
Prep the Grains and Broccoli: Get your rice going by following the instructions on the box and chop up + rinse the broccoli before cooking the steak. The steak cooks quickly, so having everything ready to go is essential. If you prefer raw broccoli, skip the cooking step. For cooked broccoli, sauté it in the pan drippings after the steak is cooked––no additional seasoning is needed.
Season the Steak: Lightly season the steak with a small pinch of salt and plenty of black pepper. Since the miso dressing is salty, adjust the seasoning to suit your taste.
Cook the Steak Bites:
Heat a skillet over medium-high to high heat. Add 1 tablespoon of oil and 1 tablespoon of butter to the skillet.
Let the butter brown slightly, then stir in 1 teaspoon of dark soy sauce.
Add the steak bites in a single layer to the hot skillet. The meat should sizzle loudly when it hits the pan—if it doesn’t, the pan isn’t hot enough.
Let the steak cook undisturbed for 30 to 45 seconds to develop a nice sear. Flip the bites over with a spatula and cook for another 30 to 45 seconds to sear the other side. I always aim for a medium-rare interior.
Remove the steak bites and pan drippings from the skillet and set aside.
Cook the Broccoli (Optional): In the same skillet, sauté the broccoli in the leftover pan drippings for added flavor.
Assemble the Bowls: Scoop the cooked rice into a bowl, top with steak bites and broccoli, and drizzle generously with the miso dressing.
