Slow Cooker Chicken Pot Pie Pasta

All the cozy flavors of classic chicken pot pie in an easy slow cooker dinner. Tender chicken, creamy pot pie sauce, and mixed vegetables cook together until perfectly comforting, then rotini pasta is stirred in at the end for a hearty, family-friendly meal.

Ingredients

  • 2 10.5 oz cans cream of chicken soup
  • 12 oz bag mixed vegetables
  • 1 teaspoon chicken bouillon
  • 1 teaspoon Kinder’s Cowboy Butter seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon poultry seasoning
  • ½ teaspoon black pepper
  • 1-1½ pounds chicken tenderloins
  • 8 ounces rotini pasta I do go ahead and weigh this out just to make sure

Instructions

  • Add Ingredients to Slow Cooker: Add the cream of chicken soup, mixed vegetables, chicken bouillon, Cowboy Butter seasoning, garlic powder, onion powder, poultry seasoning, black pepper, and chicken tenderloins to the slow cooker. Stir gently to combine.
  • Slow Cook: Cover and cook on high for 3–4 hours, until the chicken is tender and cooked through.
  • Shred the Chicken: Remove the chicken from the slow cooker and shred it using two forks.
  • Return Chicken to Slow Cooker: Add the shredded chicken back to the slow cooker and stir to combine with the creamy sauce.
  • Cook the Pasta: While the chicken is shredding, cook the rotini pasta according to package directions until al dente. Drain well.
  • Finish the Dish: Stir the cooked rotini into the slow cooker and mix until the pasta is fully coated in the creamy sauce.
  • Serve: Serve warm and enjoy.

Notes

Pasta Tip: Cook the rotini just until al dente so it doesn’t get too soft once it’s stirred into the slow cooker.
Chicken Shortcut: Chicken tenderloins shred very easily, but you can also cut them into bite-size pieces before cooking if you prefer chunkier chicken in the final dish. It may need less time.
Creaminess Tip: If the sauce thickens too much after adding the pasta, stir in a splash of warm water or milk to loosen it slightly.
Leftovers: This dish thickens as it sits. When reheating, add a small splash of liquid and stir to bring the creamy sauce back.
