It is cozy food wearing summer clothes.

Chuck roast is one of those cuts that needs time. You cannot rush her. She has boundaries.
When it braises low and slow with beef broth, Better Than Bouillon, apple cider vinegar, Worcestershire sauce, Dijon, garlic, and seasonings, it turns into tender shredded beef that is rich, savory, and perfect for tacos.
Then the BBQ sauce comes in at the end and makes everything saucy and sweet and smoky without turning the beef into a whole different recipe.
It is not traditional taco meat, and that is kind of the point. It is more like if pot roast and BBQ had a very good summer fling.

Okay technically everything is optional. We are adults. But the ranch slaw is what makes these tacos feel complete.

Ranch BBQ Chuck Roast Tacos with Creamy Ranch Coleslaw
Ingredients
BBQ Chuck Roast
- 3-4 pounds chuck roast
- 1 tablespoon avocado oil
- 1 ½ teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 2 cups beef broth
- 1 tablespoon Better Than Bouillon beef base
- 1 tablespoon apple cider vinegar
- ½ tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon brown sugar or honey optional
- 3 cloves garlic smashed or minced
- ¾ –1 cup BBQ sauce plus more as needed
Ranch Slaw
- 3 cups coleslaw mix
- ⅓ cup homemade ranch
- Juice of ½ lime
- 2 tablespoons chopped fresh cilantro
- Fresh cracked black pepper to taste
For Serving
- Flour or corn tortillas
- Shredded Monterey Jack cheddar, or pepper jack cheese, optional
- Extra BBQ sauce
- Extra jarred jalapeños
- Lime wedges
Instructions
- Preheat the oven to 325°F.
- Pat the chuck roast dry. Season all over with the kosher salt, black pepper, garlic powder, smoked paprika, and chili powder.
- Heat the avocado oil in a large Dutch oven over medium-high heat. Sear the chuck roast for 3–4 minutes per side, until deeply browned.
- In a bowl or large measuring cup, whisk together the beef broth, Better Than Bouillon beef base, apple cider vinegar, Worcestershire sauce, Dijon mustard, and brown sugar or honey, if using.
- Add the garlic to the Dutch oven, then pour in the braising liquid. The liquid should come about ⅓ to ½ of the way up the roast.
- Bring the liquid to a simmer, then cover the Dutch oven and transfer it to the oven.
- Braise for 3 to 4 hours, or until the chuck roast shreds easily with a fork. If the roast still feels tough, keep cooking and check every 20–30 minutes.
- Remove the roast from the Dutch oven and shred the beef. Skim excess fat from the braising liquid if needed.
- Add the shredded beef back into the Dutch oven. Stir in ¾ cup BBQ sauce, adding more as needed, until the beef is saucy and coated. Simmer uncovered on the stovetop for 5–10 minutes if you want the sauce thicker.
- Make the ranch slaw. In a medium bowl, combine the coleslaw mix, homemade ranch, lime juice, cilantro, and fresh cracked black pepper. Toss until evenly coated.
- Refrigerate the slaw for at least 30 minutes before serving for the best flavor.
- Warm the tortillas. Fill each tortilla with BBQ chuck roast, cheese if using, ranch slaw, extra BBQ sauce, extra jarred jalapeños, and a squeeze of lime.
